Thanksgiving Recipe Contest

Sweet Potato Casserole

 3 cups mashed sweet potatoes

 1 cup brown sugar

 2 eggs beaten

 1 tsp vanilla

 1/2 cup milk

 1/2 c melted butter

 

 Topping:

 1/2 cup brown sugar

 1/3 c flour

 1/3 c melted butter

 1 cup pecanS

 

Combine first 6 ingredients: pour into a 1 1/2 - 2 qrt. casserole dish.  Mix remaining ingredients together & sprinkle over top.  Bake at 350 for 30 - 40 minutes until hot & browned....serves 6 - 8.

 

 

 

 

Pumpkin Upside Down Cake

 1 (29 ounce) can pumpkin

 1 cup white sugar

 3 eggs

 1 (12 fluid ounce) can evaporated milk

 1 tablespoon pumpkin pie spice

 1 (18.25 ounce) package yellow cake mix

 1 cup butter, melted

 2 cups frozen whipped topping, thawed

 

Directions

Preheat the oven to 350 degrees F (175 degrees C). Line a 9x13 inch baking pan with parchment paper or aluminum foil.

In a large bowl, stir together the pumpkin, sugar and eggs. Mix in the evaporated milk and pumpkin pie spice; pour into the prepared pan.

Sprinkle the dry cake mix over the pumpkin and then drizzle melted butter over the cake mix.

Bake for 1 hour in the preheated oven, or until a knife inserted into the cake comes out clean. Cool, then invert onto a serving dish. Serve with whipped topping.

Here's a simple but delicious recipe I like to make during the busy holiday season.

 

Crabmeat Cheeseball & Crackers

 

2 - 8oz Cream Cheese

1 to 1 1/2 lbs Imitation Crab Meat

12 oz Cocktail Sauce

1 Box Crackers ( I recommend Keebler Toasted's Party Pack)

Let cream cheese stand at room temperature for 30 minutes. Chop imitation crab meat into small peices. (I like to use a hand chopper.) In a large mixing bowl, combine cream cheese & 1/2 bottle of cocktail sauce. Blend in chopped crab meat. Cover and chill for 4 to 24 hours.

Shape mixture into a ball. Pour remaining cocktail sauce over the cheese ball. Serve with crackers and enjoy!!!Becky

Jennys Farmers Salad

This is a great salad for the summer. Everytime I make it there is never any left!! Super Yummy!!

1 160z bag of lettuce

1C of broccoli florets

2 hard boiled eggs, sliced

1C diced ham

1C cubed cheese(I used cheddar)

1/2C sunflower seeds,optional

3/4C mayonnaise

3tbsp of white sugar

1tbsp of distilled vinegar

In a large bowl, combine the lettuce, broccoli, hardboiled eggs, ham, cheese and sunflower seeds.

Whick together the mayonnaise, sugar and vinegar.

Pour dressing over the salad and toss evenly to coat. Refrigerate until ready to serve. Serve Cold. Store all leftovers( if any left) in refrigerater. Make appx. 8 servings.

Salsa Baked Beans

Great for your summer outings. Easy and quick to make. Just how I like it!!!

 

2 cans of baked beans (28oz any brand)

1lb ground beef

16 oz Salsa

3/4 cup brown sugar

1 medium green pepper

1 medium onion

mustard

Worcestershire Sauce

Preheat oven to 350.

Brown ground beef, green pepper and onion. Drain. In baking dish or casserole dish, combine the ground beef mixture with the remaining ingredients. (Add mustard and Worchestershire to taste.) Bake for 35 to 45 minutes.

Can also be made in your crock pot. Do as above and cook on high for 4 to 5 hours. For spicier beans, use medium or hot salsa. My family loves the hot!!! Hope you enjoy this recipe!!! Becky

Haystacks

This is really easy to make & great for bake sales.

 

1 cup Karo Syrup

1 cup Sugar

1 cup Peanut Butter

1 Cup Marshmallows

5 to 6 cups Corn Flakes

Combine Karo Syrup, Sugar, Peanut Butter & Marshmallows in medium saucepan and cook over low heat until completely melted. Add Corn Flakes to a large mixing bowl and pour the sauce over the flakes. Stir mixture and drop a tablespoon size amount onto a cookie sheet to look like a haystack. You will need to do this quickly as it will set up fast!!!
